As the temperature continues to climb, I find myself heading to the freezer for cooling snacks. I found a recipe that is holiday festive, tastes great, and can be made with the “assistance” of your toddler. I do have to give credit to Parents Magazine for the recipe and image.
Confetti Yogurt Pops are a delicious and healthy snack for you and your family.
In a large bowl, mix 2 cups of low-fat vanilla yogurt with 1 cup of assorted berries (raspberries, blueberries, blackberries, or sliced strawberries). The colors of the berries make for a great patriotic-themed treat! Spoon the mixture into 4-ounce ice-pop molds or 3-ounce paper cups. Cover these with foil, cut a small hole in the foil, and insert a small pretzel rod. This will become the “stick,” such a novel idea! Freeze until firm, about 4 hours. Remove the foil and mold/paper cup before serving. This recipe makes 6 pops.
Sit back, put up your feet, and enjoy!
